Thyme Infused Honey Recipe
If you didn’t think honey could be any more soothing, think again! This thyme infused honey supports the respiratory system and makes a lovely addition to any cup of tea. I’m using thyme in this recipe, but swap it out for your favorite culinary herb if you prefer. Lavender, rosemary and/or sage would all be delish.
Thyme Infused Honey
For this recipe you will want dried herbs, and if they are homegrown be sure to roughly chop them. You’ll need equal parts (by volume) of thyme and honey. For example, 120 ml of thyme and 4 fl. oz. of honey. If you are short on time you can use the heat method. For this method, blend the thyme and honey and place in a double broiler. Heat on low for 6 hours, don’t let the honey heat over 115 degrees (a candy thermometer can be helpful for this). It will need an occasional stir and you’ll need to keep an eye on the water to make sure it doesn’t completely evaporate. After 6 hours, strain the thyme from the honey using a cheesecloth or old, clean t-shirt. Store in a sanitized glass jar and keep in the fridge.
If you are patient and want a more simple method, combine the honey and thyme in a jar and let it infuse on your counter or in a cabinet for 1 to 4 weeks. Strain as described above.
